We made this for dinner tonight.  It is an adaption of Farmer’s Stack Pancake Supper.  We made our own pancakes using a recipe from AllRecipes.com, Good Old Fashioned Pancakes.  Eventually I’d like to make the Apple & Pear topping Rachel Ray uses but we did not have that on hand.

Ingredients
6 Good Old Fashioned Pancakes (recipe below)
2 eggs
4 pieces of bacon
2 sausage patties

2 tbs apricot preserves, warmed

Directions
Cook pancakes, eggs, bacon, and sausage on griddle. (Eggs can be cooked according to preference.) Make a stack: pancake, egg, pancake, sausage, pancake, bacon. Top with apricot preserves. Makes 2 servings.

Good Old Fashioned Pancakes

Ingredients
1 1/2 cups all-purpose flour
3 1/2 teaspoons baking powder
1 teaspoon salt
1 tablespoon white sugar
1 1/4 cups milk
1 egg
3 tablespoons butter, melted

Directions
In a large bowl, sift together the flour, baking powder, salt and sugar. Make a well in the center and pour in the milk, egg and melted butter; mix until smooth. Heat a lightly oiled griddle or frying pan over medium high heat. Pour or scoop the batter onto the griddle, using approximately 1/4 cup for each pancake. Brown on both sides and serve hot.  Makes 9 pancakes.
